Moist Fruit Cake
Ingredients “A”
۞ 350 gm granulated Sugar
۞ 300 gm Butter (Golden Churn Butter in a tin)
۞ 200 gm Dried mixed fruit
۞ 50 ml Boil Hot Water
۞ 1 teaspoon Sunquick squash
Ingredients “B”
۞ 350 gm Plain Flour
۞ 2 tea spoon Bicarbonate Soda
۞ 1 tea spoon Cream Of Tartar
۞ A pinch of salt
۞ 250 gm Dried mixed fruits.
Mix all the above ingredients except the mixed fruits and sieve it. Then add the fruits and mix well. (see that all the fruit is well coated with the flour. Leave aside.
Ingredients “C”
۞ 3 large eggs
۞ 1 teaspoon Vanilla Essence
Instruction :
Caramel sugar till dark brown. Slowly add in hot boil water. Stir on a small fire.
Add in butter, dried fruit and Sunquick orange. Stir well and set aside.
Beat the egg with essence vanilla using a fork. Mix into the butter mixture.
Add in the flour mixture. Stir well.
Take an 8 inch diameter pan and line it with parchment or butter paper. Pour the batter into it. Cover the pan with foil and then again with parchment paper. Tie it with string or a rubber band (You need to cover the baking tin well so that no water drips in during the steaming process)
Open the steamer and place the baking pan in it quickly and then cover the steamer. Steam on medium-low heat for 2 hours and then check if there is enough water. If not, add more hot water to the steamer. Steam for another 1.5hours. Then poke with a skewer to see if coming clean .
